We Would Rather Dine on Guinness Stew!


WJ brings you a new recipe - Guinness Irish Stew
Simple and delicious, this is the perfect comfort food for a cold winters day.

Guinness Irish Stew - Serves: 4

You will need:
2lb lean stewing beef - slightly marbled is OK - cut into 2" cubes

4 tablespoons olive oil

2 tablespoons flour

pinch paprika or cayenne

pinch of salt

pinch of freshly ground black pepper

1 large white onion - diced

2 large garlic cloves - minced

2 tablespoons tomato paste

14 oz Guinness = 1 can

3 large carrots - sliced 1/2" thick

2 large potatoes - diced 1" thick

sprig fresh thyme

sprig fresh rosemary

Directions:
Toss beef cubes with 1 tablespoon olive oil, to coat.

In a small bowl, mix flour, paprika, salt & pepper. Add dry ingredients to beef and toss to coat.

Heat 3 tablespoons olive oil on high in a large skillet or Dutch oven and brown beef on all sides.

Add onions, garlic and tomato paste to Dutch oven with beef and cover for 5 minutes on low heat.

Remove all ingredients from Dutch oven, then add 1/2 of the Guinness and turn heat to high.

Bring Guinness to a boil and scrape up browned pieces from bottom of Dutch oven - this adds to the flavor.

Return meat, onions and juices to the Dutch oven and add remainder of Guinness, carrots, potatoes, thyme and rosemary.

Bring to a boil on the stovetop.

Reduce heat to low, cover and simmer for 2.5-3 hours - or, put Dutch oven in a 300 F oven for 2-3 hours.

Meat should be fork tender when completely cooked.

Serve with Irish soda bread for a completely mouth-watering meal.
